Ingredients

- Bring quinoa and water to boil in saucepan, reduce heat to med-lo. Cover, simmer until quinoa is tender and all water absorbed. About 15 min
- Roughly mash black beans with fork leaving some whole to get a paste consistency
- Mix quinoa, bread crumbs, peppers, onion, garlic, spices and egg into the black beans using your hands
- Form them into patties
- Heat olive oil in large skillet
- Cook until heated all the way through about 2-3 min per side.
