A delicious vegetarian curry dish

Ingredients

Directions

  1. Heat oil in large saucepan over med high heat. Add garlic, ginger, scallion whites. Stir frequently until soft.
  2. Stir in curry powder, carrots, potatoes, lentils, broth salt and pepper.
  3. Bring to a boil then reduce heat to simmer.
  4. Stir occasionally until lentils and veggies are tender, about 25 min.
  5. Sprinkle with green onion.
