Delicious roasted red potatoes with fresh rosemary. Very hearty, filling and yummy! Makes a great side with eggs and turkey sausage for breakfast or a great addition to a dinner meal with chicken breast or steak. It is also good by itself.
Ingredients

- Take about 3-4 lbs of red potatoes
- Wash them
- Cut them into quarters
- Slice the quarters. (keep the skin on them)
- preheat your oven to 425 degrees F.
- Place them into a glass baking dish, if you only have aluminum bake ware, use parchment underneath to keep the aluminum out of your food.
- Take fresh rosemary, wash it, and chop it finely.
- Take olive oil and pour it over the red potatoes until they are all covered well.
- Add the chopped rosemary
- Add a little bit of salt and pepper, stir well until everything is coated completely and mixed .
- Once the oven is preheated, cover the dish with foil and let cook for 10 minutes, then take it out and stir it, cover it back up and put it back into the oven.
- You do this every 10 minutes until they are done, usually about 40-50 minutes depending on your oven.
- Let rest about 10 minutes and enjoy!
